Aubergines with miso
This recipe is healthy low fat and also very tasty , a thing
that you do not often put together but it is. Also the miso topping is some
thing that you could use for fish or chicken as well so that part of the
recipes is very versatile. Serve this with the sushi rice from the other day
and you would have a very good mid week dinner.
You will need. Ingredients
2 or 3 small purple aubergine
Vegetable oil
4 spring onions or sesame seeds
4 tbsp light sweet miso paste
2 tsp sugar
1 tbsp fresh grated ginger
1 tbsp light soy sauce
2 tbsp mirin
Fisrt I will tell you have to make the miso topping , take
the miso and put it in a bowl. Now stir in the sugar and grated ginger and then
the soy sauce and mirin. Mix it until
you have a good runny paste constancy. And that is that part done.
Now take your aubergines and slice it half lengthways,
keeping the stem end intact. Now with your knife cut in to the flesh of the
aubergine making a diagonal or diamond pattern.
Now heat in a deep-sided frying pan the vegetable oil, you
only want about 0.5cm or 0.25in depth of oil in the pan, just to shallow fry. When the oil is hot place the aubergine
halves cut side down in the oil. Fry them
gently in the oil until they have slightly browned this takes about 3 minutes. Now turn them and fry on the shin side for
about 2 more minutes. Hopefully the aubergines will be fairly soft after this
frying.
Now carefully remove the aubergines from the pan and place
on some kitchen towel to take up some of the oil. While they are draining turn
on the grill.
Now take your aubergine and spoon the miso topping mix over
the cut side of the aubergines. Now place them under the grill, grill until the
miso topping is just beginning to brown, but do not let it go to dark or burn.
Now Place the grilled aubergines onto a plate and sprinkle over some of the chopped
spring onions or sesame seeds .
