Goan Coconut chutney.




Now I do not know if you can call this a chutney as like most of them it is not cooked in any way.  It is more like a blend of spices that you just let marinade for a while and then sever with a dish.  However, is does have a real intense flavour and is well worth making. The idea is that you make it about a day before you need it and then use the next day but you can freeze it and bring it out when you want to use it .  I like to think that is it a bit like pesto when you think about it.  And like pesto there are other recipes that use red chillies and just pure coconut mixes as well. The hard thing is to get the coconut out of the coconut, but you can just get it from the shop now so you do not have to do that if you want.

You will need.

115g/4oz fresh coconut
110g/4oz fresh coriander
1 onion
2.5cm/1in piece of fresh ginger
2 garlic cloves
1 chilli
2 tbsp lemon juice
1 tsp coriander seeds
2 cloves
1cm/½in piece of cinnamon stick
1 tsp salt
1 tsp sugar

Now if you are a purist you will want to smash very thing together in a mortar and pestle  and grind every thing together. But id you are like me you have a abundance of gadgets around the kitchen half of them you never use. So you should have some thing that you can use to make this mix.

First start by grinding your coriander seeds, cloves and cinnamon in to a fine spice mix.
Now you need a fine grind as you are not going to put any more coking process on this.  so if you end up with a moth full of raw spices or seeds it can be unpleasant . You can dry fry your spice before hand but it does rather change the taste with a more nutty not rather than sort of sweet and sour

Once you have done that then you have to decide what you want to do with the coconut, coriander, onion, ginger, garlic, chillies, and lemon juice.  Now you can just blend them together and produce a paste that you mix the spice blend in to.  Or you can grate and chop thing together to give a more ruff consistency to the chutney.

So now all you need to do is add you fine chopped coconut mix and your spice blend mix them together and then season with slat and sugar .

And that is it leave for 24 hours and then use in a curry or as a dip, it is has a fresh and refreshing taste.
