Daylesford and the BITE Food Festival are passionate about
real food and are partnering to provide the opportunity from beginners to the
most proficient of chefs, to join them for cookery classes from 1st to 9th
February. A stay at one of the most beautiful hotels in the Cotswolds, the
Cotswold House Hotel & Spa Chipping Campden will turn this quieter time of
year into your foodie heaven complete with treats whether in the spa or at the
festival.
Spend your day at Daylesford Cookery School, refining your
skills and techniques, learning about the finest produce and how to perfect
seasonal dishes. After all the chopping, learning, tasting and stirring, pop
back to the hotel for a relaxing complimentary treatment at the heavenly
wellbeing Spa at Cotswold House.
In the evening, depending on your chosen dates, support the
armed forces at the Combined Services Culinary Arts Team (CSCAT) Dinner on
Saturday 1st February, learn all about champagne at a dinner with Piper
Heidseick on Friday 7th February or delight in the hilarious antics of Fanny
and Johnnie Cradock at a special comedy dinner on Saturday 8th February or a 3
course dinner at Cotswold House’s delectable Grill.

The cookery school combines fresh, seasonal and, most importantly, delicious
produce and will reveal a range of techniques, recipes and skills to help you
make the most of delicious seasonal ingredients, all straight from Daylesford
farm. The BITE Food Festival masterclasses include:
Classic British Cooking, Daylesford Farm, Saturday February
1st, 9:30am - 4:00pm
A masterclass looking at the finer details of timeless
British cuisine, from classic pork pies and scotch eggs, to Lancashire hotpot
and Welsh rarebit. See new life breathed into the classics with practical
cooking sessions and creative interpretations.

Quick and Simple Suppers, Daylesford Farm, Wednesday
February 5th, 9:30am - 4:00pm
For those short on time without wishing to compromise on
great food, this course will utilise the best seasonal produce from the
Cotswolds region to prepare simple, accessible mid-week meals. The team will
provide insights into their methods and tricks up the sleeves of their chef’s
whites.

Street Food, Daylesford Farm, Thursday February 6th, 9:30am

With its emphasis on strong flavours and punchy dishes,
street food is famed for providing inexpensive, delicious food. In this course
we'll make the very most of the produce from the market garden to create quick
meals such as Daylesford's raw slaw and mackerel with pickled beetroot baps
that make thrifty cuts pack a punch.

Afternoon Tea, Daylesford Farm, Friday February 7th, 11:30am
- 2:30pm
Ideal for those wishing to master baking and pastry-making
in the pursuit of the perfect, traditional afternoon tea. Tarts, cakes and
biscuits will all be covered, along with a number of unique recipes to make
your post-meridian gatherings extra special.

Chef’s Table with Head Chef Steve Brown, Daylesford Farm,
Friday 7th February, 7:00pm
The hugely popular ‘Chef’s Table’ gives you the best seat in
the house. Enjoy a seasonal 4 course dinner whilst learning more about the methods and
techniques from our Head Tutor. Sip on a
seasonal cocktail then enjoy the wine matched to each course whilst you pick up
a few cooking tips.
