Easy one pot paté




This pate is a simple and tasty thing to make and is all done in one pot.  The only other thing you will need is a blender of some kind, I usually use my hand blender. Now this recipe is quite a bozzy on but that is up to you.  You could if you like take out the red wine and sprits and use red current jelly if you liked. Apart from that you just have to cook blend and chill and you are done .

You will need
450g/1lb chicken livers
1 onion
2 cloves of garlic
200g/7oz butter, melted
50ml/2fl oz double cream
6 tbsp brandy
6 tbsp sherry
6 tbsp port
Glass of wine
A good pinch of nutmeg
salt and freshly ground black pepper
handful of dried cranberries,  optional

You will need a heavy-based  pan over a medium to low heat to cook this. Make sure that all your chicken livers have been trimmed and are all ready to cook then add them to the pot. Plea and slice the onion and throw in the garlic cloves.  Then add the wine and pop it on the heat and let this all cook down a little.

As the wine reduces, add the butter and just let it melt in to the livers.  Then add the cream and let it cook away and reduce so it goes a sort of pate colure and most of the butter has been incorporated in to the cooking livers.

Now the liver should be well-cooked season with salt and pepper and a good pinch of nutmeg and taste the pate , if your think you need to you can season some more if you like .  Then add the port, brandy, and sherry and let it cook a little more.

Now all you need to do is blitz the whole lot with a blender so you get a puree of chicken livers.  If you like a nice smooth pate blend it for a longer time.  Now once you have pureed the livers add the cranberries and mix them in to the mix.

Then pour it in to a dish.  Now if you are going to turn it out then line the dish with some Clingfilm so it does not stick. Then put it in the fridge and let it set.  The longer you cook it the thicker the pate will be
