Horseradish mash.




You do not get any simpler than this and it is like most flavoured mashed potatoe just a matter of adding it to the cooking at the beginning or at the end. Now this all depends on if you have raw horseradish or it is coming out of a jar. Both are good and all depending on how mush you like the flavour depends on how much you use. Less if it is fresh more if it not but you will have to make it and see what you think and then adjust to you taste remembering that you can always add but you can not take away and you will not get disappointed.

For this horseradish mash you will need.
2kg/4lb 4oz potatoes
110g/4oz butter
200ml/7fl oz milk
2-4 tsp creamed horseradish, or raw horseradish grated.
Salt and ground black pepper to taste
Fresh grated nutmeg to taste

Cut and peal you potatoes as normal, get them in some water and bring to the boil then turn down and simmer till fully cooked. Drain the water away so your potatoes are as dry as possible then add then back to the pan.

While the potatoes are cooking heat your butter, milk, salt, pepper and nut meg in a pan
So all the flavours start to infuse. Now if you are using freah horseradish add that to the milk as well.

Once you milk is hot the butter has melted add that to you potatoes and cream till you have a light fluff consistency. Now if you are using horseradish from a jar add this to the mash now.

Taste and see if you need any more seasoning and then you are ready to serve. Either use it hot or keep it in the fridge till you are ready to use and just reheat.
