Candied sweet potatoes




Now when I first was told I would be eating candied sweet potatoes I thought grate like the sound of that.  When I was told that they have marshmallows melted on them I though that just sounds wrong. The thing is as it so often when I hear some thing and prejudge it I am often wrong in the end; it was the same when I was told about chocolate-coated pretzels.  It just sort of works and it is I think so simple and just so wrong that it is just right.   The problem with this kind of dish is that it flies in the face of what you think of as a traditional European potato dish. Another good thing about his is that you can make it in advance and just put it in the oven 20 minuets before you want to eat it and you are good to go.

For this you will need
6 medium to big sweet potatoes
150g/5oz dark brown sugar
125g/4oz butter
1 tbsp cinnamon
Vanilla essence
The juice of one orange
150g/5oz marshmallows

First start by getting your sweet potatoes wash them and leave the skins on. Put them in a pan of water and brining them to the boil and simmer for about 20 minutes so they are soft.  Then take them out of the water and in to cold water and cool them down.  Now if you can it make a nice looking dish if you use half of white sweet potato and half orange.  This way when you arrange them in the dish you can alternate between white and orange.  Once they have cooled, cut them in to thick slices and arrange them in a dish.

Next, make the sauce for the potatoes, take your butter, brown sugar, cinnamon, vanilla, and the juice of one orange, and put it all in a pan.  Heat gently so the butter melts and then bring to the boil, and spoon over the potatoes. Try to make sure that all the potatoes get a covering of the sauce.

When you are ready to finish the potatoes put them in a preheated oven set at 200c/400f.  Put the potatoes in for about 10 to 15 minutes.  Then take out and arrange the marshmallows over the potatoes, leave some space between the as you want splodges of marshmallow around the dish on just in one lump.  Then put back in the oven until the marshmallows have melted and gone a little brown.

Simple sweet and good to eat .
