Jerk Chicken




If you face a change and you want some thing that will light up your dinner then this is I think a sure fire way to do that. Jerk chicken is a Caribbean dish that is with out doubt one of the most famous and misunderstood, apart from rice and peas , I was expecting to see peas.  Any way the reason why I say it is misunderstood is that every one I talk too think that it should be so hot you can not eat it.  Well it is spicy but I would not say it is that hoe , the blend of sweet and sour cuts the heat of the spice likes so many dishes like this that it is a true classic dish.

For this you will need,
4 chicken breasts
4 chicken leg joints
2 tsp ground allspice
2 tsp dried thyme
2 tsp cayenne pepper
2 tsp ground ginger
2 tsp ground nutmeg
2 tsp ground cinnamon
4 tsp garlic puree
4 tsp ginger puree
2 tbsp dark sugar
60ml/2fl oz dark rum
60ml/2fl oz lime juice
60ml/2fl oz soy sauce
125ml/4¼fl oz cider vinegar
2 tsp chilli puree
1 large onion

First make your marinade, take all the dry spices and add them to a bowl along with the sugar and the rum and stir this all around until it is fully combined. Then add the garlic ginger and chilli and all the liquids and mix this in until you have a dark smooth paste. Finally add your onion finely slices to the mix.

Now as for the chicken you can have it skin on or skin off.  But I think it is better with skin on.  What you need to so is slash the skin and the flesh of the chicken and then get that in to the marinade.  Get your hands in and make sure that the marinade is well worked in to the chicken.  Now cover this and set this all in the fridge for a good 2 to 4 hours, the longer the better.

Now when you are ready to cook get a large thick bottomed frying pan and set that on the stove top and turn your oven on high.  Get the frying pan smoking hot and place the chicken all skin side down in the frying pan. Then turn the chicken over and get it in the oven. When it has been cooking for a while take it out and add the rest of the marinade and then return to the oven.  Altogether, form beginning to end it should take 40 to 50 minutes.  As it cooking just keep rolling it in the spicy marinade making sure that it gets well cover and sticky.

What you should end up with is well-cooked chicken with a spicy crust from the marinade.  This Dish is perfect for the barbeque as well.
