Courgette and carrot bread


Now I know that some of you have never made bread and would not like to make bread. And the question is with so many good bakers around today why would you want to. But this is something that you can make and is very easy. In fact it is more like a cake than bread as you make a batter and then bake it. I think it is an American recipe that I took this from a long time ago but as for the vegetables that you use it is up to you. Everything from herbs, apples, nuts and one of my favourite that I made was roasted beetroot. Basically replace the courgette and carrot with a veg of your choice, as for the pine nuts they give it texture.
You will need

187g/7oz courgette
187g/7oz carrot
3 eggs
Zest and juice of one lemon

125ml/4floz vegetable oil

375g/13oz plain flour

2tsp baking powder

3 good pinches of salt

3 good pinches of sugar

A good grind of fresh black pepper

Fresh oregano

75g/ pine nuts

Start by grating the vegetables in a bowl then add the eggs, oil, salt and sugar and beat it all together. Then zest you lemon and add that to the bowl, along with the juice. Then add some fresh chopped oregano to it all.
Now in another bowl sift you flour and baking powder together then make a well in the centre. Now add the egg mix and the pine nuts and blend everything together. What you end up with is a batter mix.

All you need to do now is line a loaf tin as if you was backing a cake and preheat your oven to 180c or 350f then bake for about 40 to 50 minutes.
You end up with a bread that has a very moist texture ,  good with all sorts of things and a good way of getting kids to eat vegetables.
