Make your own doughnuts.


There is something about walking along the sea front eating ice cream shell fish and rock that is so British. The light and noise of it all as you see the world go by as you sit and just watch whatever is going on around you, a perfect waste of an afternoon if you ever need to waste an afternoon. And in all of that noise , the people and the clattering of fruit machines you have one smell, and when I smell that smell I have to have them, fresh doughnuts. So what could be better than to make your own.

You will need
450ml/16fl oz water
300g/10½oz butter
2 pinches salt
45g/1¾oz sugar
450g/1lb plain flour
9 eggs
Vegetable oil
50g/2oz ground cinnamon
150g/5½oz caster sugar

Start by adding the water , butter, salt and sugar in saucepan and simmer until  everything is melted together. As this is coking sift the flour into a bowl. Using a whisk slowly add the flour a bit at a time to the water mix.

Beat it with the whisk over the heat and keep on working it till the mix leaves the sides of the pan then take of the heat and out of the pan on to a try to let it cool a little. Then once you can handle it get it in to a food processor or in to a electric whisking bowl .

Add the eggs one at a time and keep on working the mix till you have a velvety textured batter. Now as we do not have one of the machines the best way to form you can pipe the mix on to greaseproof paper on a try , then place the try in the freezer until the dough is solid.

Heat enough vegetable oil to deep fry then then fry the doughnuts for about 8 minutes until golden brown. Then remove from the oil let them drain a little and then roll them in the cinnamon and caster sugar.

Just remember when deep frying in oil to be very careful as you do not want to burn yourself.
