Whipped Frozen Orange, Rooibos and Peach Yogurt


Preparation Time: 3 ½ - 4 hrs

Serves: 4-5 portions





Ingredients:

1 x 500g pot of Provamel Orange and Redbush Botanical Yogurt

35g cashew nuts, finely ground

1 tbsp xanthan gum powder

1 x 410g tin of peaches

Method:

-       Using a blender, blend the peaches until you get a smooth purée. Add in the ground cashews, xanthan gum powder and Provamel Orange and Redbush Botanical Yogurt and blend again until combined. Pour this mixture into a shallow metal tray and place in the freezer for 1 hr.

-       Remove the tray from the freezer and add the slightly frozen mixture back to the blender and process until smooth.

-       Pour this back into the tray and place back in the freezer.

-       Repeat this process a total of three times before returning to the freezer for a final 45 mins to serve.

(N.B. Best served straight away – leaving in the freezer can cause the yogurt to go lumpy)
