Whipped Frozen Orange, Rooibos and Peach Yogurt
Preparation Time: 3 ½ - 4 hrs
Serves: 4-5 portions
Ingredients:
1 x 500g pot of Provamel Orange
and Redbush Botanical Yogurt
35g cashew nuts, finely ground
1 tbsp xanthan gum powder
1 x 410g tin of peaches
Method:

Using a blender, blend the peaches until you get a smooth purée. Add in the ground cashews, xanthan gum powder and Provamel Orange and Redbush Botanical
Yogurt and blend again until combined. Pour this mixture into a shallow
metal tray and place in the freezer for 1 hr.

Remove the tray from the freezer and add the slightly frozen
mixture back to the blender and process until smooth.

Pour this back into the tray and place back in the freezer.

Repeat this process a total of three times before returning to the
freezer for a final 45 mins to serve.
(N.B. Best
served straight away – leaving in the freezer can cause the yogurt to go lumpy)
