Walnut loaf


This is a very nice bread to be served with cheese, there is something about it that really goes well with strong cheese as well, serve it with stilton, even better Roquefort or a really strong mature farm house cheddar.
You will need
225g/8oz strong white flour
225/8oz malted brown flour
1tsp salt
15g/½oz fresh yeast
290ml/½pt lukewarm milk
1tbsp olive oil
225g/8oz chopped walnuts
1 egg
1tbsp clear honey.

Take the yeast and add a couple of table spoon of the warm milk along with a little of the white flour and let it sit for a bit so it starts to foam. Then sift the flours in to a large bowl and make a well in the centre. Add the yeast and the rest of the milk in to the flour along with the oil and work it all into a dough.
Knead the dough for about 5 minutes until nice and elastic; use some more flour if needed. Now place back into the bowl, cleaned and cover, and let it double in size for about 1 hour. Then when you knock back the dough knead in the walnuts and shape and form the dough in to a loaf shape. Place on to a baking sheet and slash the top with a knife. Then cover and lit it rise once more until it has grown to about one and a halftime it original size.
Preheat your oven to 190c/375f then take the honey and the egg and beat it together.  Now take the honey and egg and glaze the bread. The bread will take about 30 minutes to cook , then take out and lightly re-glaze the bread and then back in the oven for a little longer , about 5 or so minutes. Once the bread sounds hollow when you tap it underneath it is ready.
Take of the baking sheet and let it cool on a wire.  Now all you need is some good cheese and a nice glass of red wine.
