My best Coleslaw Recipe


Now you get all sorts of salads and many of them are really nice but I think still out of all of them potato salad and coleslaw must be the most popular. I know that it sounds boring but to me at the end of the day I have to put up my hand and say yes I love them as much as everybody else. There will do those who say you should have the delicate tomato and basil salad with balsamic vinegar, or the roasted beetroot , squash, sweet potato and goats cheese salad. And well you can say that if you like you can look down on the humble coleslaw and say that is so common and you are probably right. After all most of it is purchased from supermarkets and is bound only in what you can loosely call mayonnaise. It never seems to be seasoned and the vegetables in it are always nondescript carrot and white cabbage. Made to the lowest price point and the blandest of plates to cover the most market share. So let us think about what we are saying when we look down on the humble coleslaw. It is humble and uninteresting because we make it so. So today I give you my recipe and I hope if you make it , it will change your mind.

For my coleslaw
¼ red cabbage
¼ white cabbage
3 carrots
1 large white onion
4 spring onions
1tbsp caraway seeds
1tbsp horse radish cream
100g/4oz mayonnaise
Salt and freshly ground black pepper to taste

The method is easy just get everything in to a bowl and mix it together. Then cover it and pop it in the fridge for about 30 minutes so everything gets to work together and finally serve.

There are only two things that you have to do, one is make sure that your vegetables are as fresh as you can get them. Make sure that you have a nice fine shred of them all, all about the same size. The easiest way to do this is use a food processor if you have one.

The second is use the very best full fat mayonnaise. It is the mayonnaise and the juices from the vegetables that combine to give it the flavour that the salad requires so please, please, please you a good mayonnaise.

Now all we need is some summer weather and we might have some time in the garden to enjoy it. After posting that I was going to encourage the summer by doing lots of barbeque recipes we have had nothing but rain. I do not know why that should surprise me living in Briton but is always does.
