Spiced lamb burgers
This is an attempt by my self to get some sunshine in the
damp summer we are having so far by doing some barbeque recipes. You never know
it might work. This lamb burger is a really nice Indian spice burgers that you
can make and grill or freeze and cook latter.
For your burgers
1 small onion, quartered 4cm/1½ in piece fresh ginger
4 large garlic cloves
20g/¾oz fresh coriander
2-3 green chillies
450g/1lb lambs mince
¾ tsp ground cumin
1½ tsp garam masala
1 tsp salt, or to taste
1 large free-range egg
2 slices thick-cut white stale bread
2 tbsp oil
Now to make your burgers you need to have all the
ingredients roughly the same size but not to fine. First make your bread crumb,
now if you can take some bread out and just leave it out over night so it dries
out for the best result. Alternatively, save your crusts, let them dry out, and
make breadcrumbs with them. Just put the dry bread in to a food processor and
turn it on until you get a fine breadcrumb.
Now take your onion, ginger, garlic, coriander and green chillies
put them in to the food processor and plus them to chop them. Other wise it is
chopping every thing by hand. Now add this to a bowl with the breadcrumb, lamb
mince, cumin, garam masala, salt and egg and mix it all together. You want a
nice firm mix not to sloppy that will form in to burgers.
Shape into six burgers by and or if you are like me use a pastry
cutter for a more professional effect. The chill in the fridge for 20 minutes
minimum or longer. Take them out 10 minuets just before cooking and grill them
for about 5 to 10 minutes on each side all depending on how thick they are and
how hot your grill is.
To serve make a mint herb yogurt dressing and serve in a bun
with a bed of lettuce, topped with tomatoes and onion rings. That might bring
the sun out.
