Ben Fisher Appointed As Head Chef At The Gallivant



Ben Fisher has been appointed as Head Chef as The Gallivant, Camber in Rye.

Having worked in some of the world’s leading restaurants, including The French Laundry (3 Michelin stars) in California and as Sous Chef at Tom Aiken’s Restaurant (1 Michelin Star), Ben recently relocated to Rye with his young family. He has been working alongside Trevor Hambley for the previous 6 months and was instrumental in helping The Gallivant achieve its 2nd rosette this November.

Using genuinely local produce has been one of Ben's passions since his time at The French Laundry where 70% of the vegetables were grown on site under the careful and watchful eye of Thomas Keller.  Ben now has his eyes fixed on the lawn to the rear of the hotel where he would love to site a greenhouse and vegetable patch.

The Gallivant’s ethos has always been to use the freshest possible produce from as close as possible, working in close partnership with local farmers, fisherman and artisan suppliers including seafood and catch of the day delivered directly from the Rye boats daily. The haul often includes Coley, Whiting, Gurnard, Megrim, Flounder and Dab, all of which frequently pepper the specials menu at the Bistro at the Gallivant

In addition to the very best ingredients Ben’s secret to a good kitchen is a “happy” kitchen, something he learned directly from Thomas Keller, and he is looking forward to creating a warm and welcoming atmosphere on both sides of the pass.

The Gallivant Hotel is a coastal chic hideaway, once a former retro motel, on the edge of Camber. The hotel is tucked away opposite the famous golden beach of Camber Sands, looking onto the dunes and sea grass.

Surrounded by the un-manicured openness of the Romney salt marshes, the hauntingly beautiful Dungeness and a myriad of un-spoilt authentic villages, The Gallivant is only 90 minutes away from Central London, five minutes drive from the quintessentially English town of Rye, with its charming cobbled streets and renowned antiques shops.
