Champ




Champ is just mashed potatoes that have some spring onions threw them.  But it can be more than that. This recipe is a little different as you bake the potato and do not boil.  This gives the potato a really intense flavour and you do not have any extra water in the mash only the flavour of the dairy products.  It is a very effective way of getting a really good flavoured mashed potato of any recipe.

You will need
1.35kg/3lb old potatoes.
145ml/¼ pint milk
145ml/¼ pint cream
85g/3oz butter
Salt to taste
Pinch of black pepper
Pinch of white pepper
1 large bunch spring onions, finely chopped

First, wash you potatoes to make sure that they are free from any dirt then lay them on a try and put them in a hot oven to bake.  Now the best potatoes to use are any of the soft floury varieties such as Estima, King Edward, Maris Piper, Desiree. Once they have cooked completely then remove them from the oven and set on the side to cool, so you can handle them with out burning your self.

Now scrape all the soft white potato out from the skins and put that in a pan . Add the milk cream and butter in another pan and bring that to the boil. Now add the milk pan to the potatoes and stat to mash every thing together. You might want to put this on the heat for a little to make sure that the potato is hot.

Now chop you spring onions up and add them to the mash mixing them well in to the potato.  Finally, season with salt and both black and white ground pepper and you are ready to go.  It does not have to have two kinds of pepper but it does give it a little lift.
