Linguine with prawns and mussels




Some times, you do not want to spend a long time cooking or you might find that you have friends around suddenly and you have to cook. Or if you are like me and you have been cooking all day and you want some thing that is simple and easy. Well this dish can fill all of those occasions.

You will need
500g/1lb 2oz mussels
250g/9oz whole raw prawns
6 tbsp olive oil
1 garlic
½ red chilli, finely sliced
50ml/2fl oz white wine
The juice of 1 lemon
Flat leaf parsley
400g/14oz linguine
Salt and freshly ground black pepper

So start by cleaning your mussels, removing the beards, tapping them see if they close all that sort of thing and then just give them a good wash. You can Peel the prawns, removing the heads but I do not bother, this is food to get involved with.

Gte a pan on with some salted water in it and bring this to the boil. Add the linguine into the boiling water and cook for about for 7-8 minutes until al dente.

While you are doing this have a large pan, with a lid, that you can heat the  olive oil in. Add the garlic and chilli then the mussels and the wine.  Put the lid on and let it cook for about 1 to 2 minutes, so the mussels start to open. Then add the prawns and cook for another  4 to 5 minutes,

Finally remove this pan from the heat and squeeze in the lemon juice, add the parsley roughly chopped, add the pasta, and toss every thing together.  Season with salt and freshly ground black pepper. Discard any mussels remain closed, get a good glass of white wine and a good piece of crusty bread serve in to a bowl, sit, and enjoy.
