Pommes Aïoli




Now all this is, is a garlic potato salad, but I do not care its really mice so have a go at making it .  Any thing that you make using homemade mayonnaise is so much better than any thing you can get in the shop. As long as you keep it chilled then you will be fine making it , and use the same day.

You will need.
350g/12oz new potatoes
2 egg yolks
1 tbsp white wine vinegar
1 tsp dijon mustard
150ml/¼ pint/5fl oz olive oil
Lemon juice
1 clove garlic
Salt and black pepper to taste
Chopped parsley, chervil or chives Optional.

Start by getting you new potatoes and dicing them up then place them in a pan with some salted water and bring to the boil.  Then simmer until the potatoes are fully cooked tip the potatoes in to a colander and let all the water drain away. Now I like to use a quite hard waxy potato for this so it keeps its shape and texture.

Once you have cooked your potatoes get your egg yolks and start to whisk them in a bowl. Slowly start to drizzle in the olive oil a little at a time so it starts to emulsify. Once you have just over half the oil in the dish add the mustard, vinegar, and then the rest of the oil whisking all the time.

When you have a thick mayonnaise, add the crush the garlic, and add that to the mix and season with slat and pepper.  Finally add the potatoes still a little warm so they take on the full flavours of the mayonnaise.  Finnish with a dash of lemon juice and garnish with chopped herbs if you like.
