Baklava


A baklava is a sort of layered filo pastry pie or tart. You can have them sweet as far as I know or savoury, with any number of fillings. Now I have seen this sort of thing a few times, so this is my interpretation of the dish so I hope that you like it.

You will need
2-3 tbsp vegetable oil
2 onions, sliced
600g/1lb 4oz feta cheese
450g/1lb baby spinach leaves
100g/3½oz pistachios,
Salt and freshly ground black pepper and nutmeg
150g/5½oz unsalted butter, melted
20 sheets filo pastry

First to make you filling , heat some oil in a pan and then slice the opinions . Slice the onions and add them to the pan letting them cook on a high heat so they start to go just go brown. Then take then of the heat and it to a bowl. While the onions are cooking roughly chop up the pistachio nuts.

Add the onions the feta, spinach and pistachios and with a spoon work this all together. The soiach will start to wilt with the heat of the onions and the cheese will just start to melt and combine. Season well with fresh ground pepper and salt and a little nutmeg

Now for this much you will need a  36cm x 24cm or 15in x 10in dish  about 5cm to2in deep. Grease the dish with some melted butter then start to layer you filo . Lay one  sheet of filo pastry in the bottom of the dish  then brush it all over with melted butter. Then repeat that until you have about four layer of pastry. Now spread one third of the spinach covering the filo and repeat so you end up with about three layer of spinach and four layers of filo 4 sheets per layer. Make sure that you butter between each sheet of filo on each layer.

Now on the top finish with the remaining filo sheets brushing  the top layer of pastry with the remaining melted butter. Then with a sharp knife, cut a criss-cross pattern into the top layer of pastry.

Preheat your oven to 160c/300f and bake for about 30 to 40 minutes, or until the pastry layers are crisp and pale golden-brown.  

You can have this hot or cold it is a versatile thing to make , make one with apples date and cover with cinnamon icing sugar , now that is nice.
