Loukoumades


If you do not know a Loukoumades is a deep-fried doughnuts served with a honey syrup. It is as far as I know a Greek recipe but I think like many things of that reign it is made in several countries around the Balkans and all with different names. This particular recipe I found in a Greek cookbook so I am going with calling this a Greek recipe.

You will need
250g/9oz plain flour
1 tsp salt
2 tsp fast-action dried yeast
1 tbsp clear honey
250ml/9fl oz warm water
100g/3½oz runny honey
1 tbsp soft light brown sugar
½ lemon, juice and zest
1 tbsp butter
1 tbsp water
50g/2oz pistachios
Greek-style yoghurt
Ground cinnamon
Icing sugar

First you have to make your dough, stat by sifting the flour in to a bowl. Add the yeast and mix that in to the flour with a spoon , then add the honey in some warm water. Mix every thing together so it is well combined and you have a smooth bough. Then cover with a damp tea towel and cover in a warm place for about  40 to 50 minutes.

While the yeast is doing it  thing you can make the sauce to go with the doughnuts. Add the honey, sugar, lemon zest and juice, butter and 1 tbsp water in a saucepan and heat until the sugar has dissolved. Then chop up the pistachios roughly add them to the sauce and remove it from the heat.

Now you need to beep fry you doughnut batter fill a pan with oil or use a deep fat fryer you need to heat the oil up to about 180c/ 350f for the best result and if you are using a pan do not just walk off and leave it , you do not want a fire in the kitchen.

Take a little of the batter and drop it in to the oil if is cook and rise to the top going nice and golden brown the oil is ready. Used two spoons and form a sort of teardrop doughnut, drop it in the oil and let it fry; it should take about 3 or 4 minutes to do. Remove from the oil on to some kitchen towel to remove and excess oil.

To finish pour some of the sauce over the doughnut dust with icing sugar, cinnamon and a little Greek yoghurt , sweet sticky honey soaked doughnuts , truly what we all need and hand the diet.
