Academia Barilla And The Art Of Italian Gastronomy



For those who want to learn more about Italian culinary tradition and who want to travel around the Italian peninsula to discover the best food itineraries, Academia Barilla is the ideal starting point. And not only for them. Seated in Parma, a city renowned for being the capital of Italian Food Valley, Academia Barilla was created back in 2004 to develop, defend and promote Italian culinary culture through educational programs, cooking classes and special events dedicated to professionals, or just for food lovers, as well as through the editorial activity and the selection and distribution of best typical Italian products (Extra Virgin Olive Oil, Balsamic Vinegar, cheeses, such as DOP Parmigiano Reggiano, etc). 

The headquarters of Academia Barilla were designed by Renzo Piano in the area of the old Barilla Pasta plant and they are equipped with a 90-seat Auditorium, a multisensory laboratory, a practical training hall, and 16 professional kitchen ranges. A special place within Academia Barilla is occupied by the Gastronomic Library, a monothematic collection boasting more than 11,000 volumes (the most ancient one date back to the 16th century) and 30 periodical magazines. And where else would one find a huge collection of 4,700 original historical menus dating back from as early as 1848?

In 2011 Academia Barilla launched the complete Certification Program that includes the “Fundamental of Italian Gastronomy” (FIG) with the foreign Culinary Institutes which provide their students with Italian cooking courses, the "Certification of Proficiency in Italian Cuisine" (CPIC) for expert chefs who have demonstrated experience (minimum 3 years in restaurants, 2 years of which must be in an Italian restaurant) and the honorary recognition "Italian Cuisines Master Chef" (ICMC) for all the professional chefs who have distinguished themselves through their contribution to the dissemination and preservation of Italian cuisine in the Countries where they reside.


Academia Barilla does also organize Gourmet Tours with a duration ranging from 1 to 7 days. The eno-gastronomic tours make possible to experience the very best of Italian culture and gastronomy, across the regions: from the original vinegar producers of Modena and Reggio Emilia, to the historic salt pans and pastry tradition in Sicily, and include opera concerts, spa breaks, dinners in castles or historical mansions.
