Baked stuffed apples.
Now when I was a young boy my mum used to bake apples in the
oven with brown sugar on the top. The
skin and sugar caramelised and you have them best crisp skin on the outside,
and under that soft apple. Well this is
like that but instead of taking out the core of the apple and stuffing it with
mincemeat I use a mix of dried fruits and spices.
4 large cooking apples
Some sultanas about a hand full
Some dry apricots about 12 to 16
Pinch of ground nutmeg
Pinch of ground cinnamon
2 tbsp lemon juice
3 tbsp unrefined sugar
Now as to how much dried fruit you need that is a deficit
question to answer as it all depends on the size of the apple and how much of
the core that you take out .
First, take your dried fruits and then place them in a
bowl. Add the dry spices and 2
tablespoons of the sugar. Then add the
lemon juice and give it all a good stir round so that every thing is well mixed
together. Now all depending on how much of the core you take out you might want
to cut the dry apricots up so that the fit in to the space in the middle of the
apple.
Now wash your apples to make sure that you do not have any
thing on the out side of them. Then
remove the core from the centre of your apple and place them on a baking tray.
Now take the dried fruit mix and stuff the centre of the
apple, pack it down .then with the last of the sugar sprinkle the sugar on the
tops of the apples.
Now place them in the oven set at 200c/400f and bake them
for about 30 to 40 minutes. Just be carful not to over cook them or the skins
will spilt and the apple will just burst out.
The once they are cooked use a fish slice and lift them on
to plates and serve them straight away.
