Dried fruits fool.




If you are like me you have had your fill of all things chocolaty and rich, are now looking for some thing light, and clean tasting. Also it is up to you what you make this out of as far as the yogurt goes.  I like Greek yoghurt as it is a little thicker, but you could use low fat yoghurt.

225g/8oz dried fruit mix.
1 banana
1 to 2 tbsp Lemmon juice
3 to 4 tbsp clear honey
225g/8oz yoghurt
5 or 6 dry apricots

Now to make this you do not need a lot of skill just a little time and you are good to go.

Start by taking your dried fruits and letting them soak in a bowl for about 8 hours or over night.  Now you can just get one of those bags of dried fruits from the shop but I would not use prunes if you can help it.  Best if you can use dried apple, pears, or peaches. The only reason why I say this is that prunes tend to make it look somewhat grey and it just does not look that good.

Now all you need is a food processor. Add your banana, yoghurt honey and lemon juice to the mixer.  Then string all the liquid of your dried fruits and add them to the mixer.  Now blend it all together.

Now scoop out and spoon in to about 4 or 6 glasses or just a big serving bowl and let it set in the fringe for about 30 minutes.

Then when you are ready to serve just slice up the apricot in to thin slices and sprinkle this on to and serve.

Incredibly light , refreshing and all depending on what yoghurt you use very low in fat as well.
