Red Lentil Soup.




This is a good winter soup that is low in fat very filling and simple to make , from beginning to end it takes about 30 minutes. Another good thing about soup is that it is very filling some thing to do with it filling more of you gut so your body tells you that you are not hungry. So for the new yare weight loss program try this for a meal .

You will need
225g/8oz red lentils
2 carrots
2 onions
2 sticks of celery
1 leek
1½ lit / 3 pt water
1 vegetable stock cube
Ground black pepper and salt to taste

Now the secret is to chop every thing, as fine as you can and cook your lentils well and you will have a good soup.

Wash your lentils and add them to a pan with a little of the water and the onions.  Bring this to the boil adding more water as you need it. When the lentils have started to go soft, add the rest of the water and the stock cube.  Bring this to the boil and then add all the rest of the vegetables.

Now using a blender you can whiz every thing together and add some more water if you have to, what you should end up with is a thick orange colourer soup. 

Finally season with salt and pepper to taste and that is it your soup is ready to go.

Now if you like you can just puree the lentils in the liquid and then add the vegetables so you cab see them and make a more interesting looking soup.

Also you can use chopped tomatoes and red peppers as well, just finish with some fresh chopped basil.
