Pork or prawn dim sum




Dim sums are the sort of thing that you can find all over china from top restaurants to street vendors. I think that you find them very hard to beat and you can get so many filling with just about any thing you want from sweet to savoury. And despie what you might think very east to do.

Ingredients
For the filling
250g/8oz minced pork or raw prawns
1 large spring onion,
1 tbsp grated fresh root ginger
1 tbsp light soy sauce
1 tbsp rice wine or dry sherry
1 tsp toasted sesame oil
2 tsp corn flour
Salt and ground black pepper
10 ready-made wonton wrappers
Oil

First things first if you are using prawns then make sure that you have them with the shells removed and deveined and roughly chopped. Also, do not used cooked prawns they do not stick together as they are supposed to.

Next, add all the other ingredients in to the raw prawn or pork and mix it all together, apart from the wonton wrappers. Then let it sit for a little bit to give time for the starch in the corn flour tot start to really work.

Now take spoon of the mix and place it in the centre of one of the rappers. Gather the sides together and from a ball or pasty shape. Pinch the edges together or use a little oil or water to help it stick. Carry on doing this until you have used up all the filling.

Then all you need to do is oil the base of the steamer singly to stop the wrappers from sticking. Then steam then over a pan of boiling water steam them for about 8 to 10 minutes until fully cooked. Make sure that the wontons do not go in to the water and they should cook perfectly.

Now all you need to do is serve them hot with a chilli dip and son dark soy sauce.
