Baileys and chocolate cheesecake



Now this is an easy and very naughty dessert that anyone can make. I would not even really call it cooking, it more like just mixing. But it tastes really, really nice and if you have to you can knock it together in a few seconds or so.

You will need
100g/3½oz butter
250g/8¾oz digestive biscuits
600g/1lb5oz cream cheese
25ml/1floz Baileys
100ml/3½oz icing sugar
300ml/10½oz double cream
100g/3½oz grated chocolate
Cocoa powder

Like I said this is easy so do not worry, first crush your digestive biscuit to make the base. Melt the butter and add that to the biscuits, mixing it in until all the butter had been soaked up in the biscuits. Then press the biscuits to form the base. If you have a springform cake tin then use that. Pop the base in the fridge to set and chill.

Now you are half way there the next step is to take the cream cheese and Baileys and whisk them together until you have a smooth paste. Then whip up the cream then add the icing sugar to the cream. Now fold the cream and the chees mix in to each other.  Last of all add the grated chocolate to the mix and combine that in, then spoon on to the base. Smooth it down so it is all level.

Now you need to keep this in the fridge for about 2 hours so it set fully. Once it has set take it out of the cake tin and sprinkle coco powder over the top to decorate. Easy to make great to eat , what more do you want.
