Fiona Cairns Ltd designs and creates luxury cakes. From celebration and bespoke wedding cakes to tea time treats, there is a cake for everyone.

Classically designed with contemporary twists, each and every cake is lovingly hand-made and hand-decorated using only the best ingredients, ensuring that each one tastes as good as it looks.

Established over 25 years ago at Fiona's kitchen table, the business was formed following a batch of miniature fruit cakes she made for friends one Christmas. Trained as both a graphic designer and pastry chef, Fiona's cakes were both beautiful and delicious.  There was nothing like them on the market at the time.  Following demand, Fiona and her husband and business partner, Kishore Patel, founded a thriving business.

The Leicestershire-based bakery produces handmade cakes for every season and occasion. A skilled team of product developers, bakers and decorators are constantly working on new designs, recipes and techniques. They still bake thousands of fruit cakes to the same recipe the business was founded on.

Handmade
From the sponge to the icing and decorations, Fiona Cairns cakes really are handmade. Each miniature candy cane on a Christmas cake or Dolly Mixture on a fairy cake is carefully handcrafted and delicately placed on top by one of the team. The generous buttercream on the cupcakes and the fondant on the fairy cakes is piped by hand, before being liberally sprinkled with anything from gold dragees, miniature chocolate eggs or chocolate curls.

Quality Ingredients
Fiona Cairns never settles for second best when it comes to ingredients. Using outstanding Lexia raisins and Vostizza currants in all their fruit cakes, along with tamarind paste, cinnamon, nutmeg, allspice, coriander, cloves, and mace. Not forgetting the kick; in some of the cakes the very best Jamaican rum, brandy and a lacing of Olorosso cream sherry is added before entering the maturation room for a minimum of forty-five days.

The bakery only uses free range British eggs and only the finest unsalted butter goes into their premium buttercream and biscuits. They freely use stem ginger, sticky black treacle and English marmalade in their recipes with the icings naturally coloured wherever possible.

Bespoke
An integral part of Fiona Cairns Ltd. is the creation of bespoke cakes. The team of designers work closely with their clients listening to aspirations and ideas to create magnificent one off designs, often going beyond expectations.

Over the years, Fiona has made bespoke cakes for well-known individuals such as Bono, Pink Floyd, Simply Red, Sinead O'Connor and Sir Paul McCartney.

Books
Fiona Cairns has also published three cookery books since Fiona Cairns Ltd began; The Birthday Cake Book, Bake and Decorate and Seasonal Baking. They are all available to buy on the website and are all personally signed by Fiona herself. The Birthday Cake Book has 52 recipes and 61 cake decorations giving ideas for Birthday Parties and teatime celebrations alike. Bake and Decorate is the perfect recipe book for those who want to make cakes that both taste fantastic, and look beautiful too! Seasonal Baking is full of baking inspiration whatever the time of year or occasion.

The Royal Wedding Cake
In 2011 the company was commissioned to design and create the Royal wedding cake for TRH The Duke and Duchess of Cambridge - a great honour and achievement for Fiona and her team. The stunning eight-tiered cake was made from 17 delicious fruitcakes and decorated with over 900 handmade sugar flowers and intricately piped lacework to reflect the fabric of the wedding dress. The magnificent creation made for an astonishing centrepiece at the Buckingham Palace reception and the cake was later displayed as part of the Summer Exhibition at Buckingham Palace.
