Rapid Cook with Convotherm, Rapid Chill with CONVOChill

Convotherm has been producing top of the range combi-ovens
for a number of years. With the range including a variety of sizes and designed
there is something to suit any commercial kitchen. As a new addition to the
range, Convotherm has developed Cook&Chill that can be used in conjunction
with the existing range. The development
utilises CONVOChill, a range of rapid coolers and shock freezers designed to
quickly and efficiently chill pre-cooked produce for storage.
By giving caterers the option to prepare dishes during the
quieter periods, the pre-cooked food can be rapidly chilled to prevent the loss
of texture and flavour, maintaining the dish at its best for service at a later
time. The CONVOChill ensures that during busier times the capacity of the
kitchen is not over stretched and leaves staff able to simply regenerate the
meals in the Convotherm when needed.
Simon Frost, Regional Sales Director at Manitowoc explains
how the caterers can benefit from the new addition to the range:
“The rapid cooling undertaken by the CONVOChill allows food
temperatures to decrease remarkably quickly, going from roughly +90oC to +3oC
in a very short period. This results in the food retaining its freshness,
succulence and texture even when stored for several months. Although using
fresh produce is preferred by many, the Cook&Chill method perfectly suits
fine dining establishments, as well as it does those producing meals in a mass
production setting. Vegetables for example can be produced to exacting
standards in a Convotherm, boiled, steamed, fried, baked or roasted, before
being rapidly chilled. When ready to be served a simple flash fry or bake in
the Combi-Oven and they are back to their best.”
Allowing chefs to prepare meals in advance using the
combi-oven, and stored using the rapid cooler beneath, enables caterers to make
the most cost-effective use of staff and equipment, resulting in greater levels
of efficiency and increased profit margins. The CONVOChill appliances are also
gastronom compatible making them ideal for restaurants and catering
establishments providing banquets and large events.
