Fast pea soup.



In the world that we live a simple and covenant food that can be made in just a few minuets is a good thing. I have made this for the whole family served and on the table in about twenty minuets. A microwave meat takes about the same from defrost to full cook so this is a lot better. And you only use just the one pan so you can not say that it creates lots of washing up.

You will need

15g/½oz butter
1 onion finely chopped
1 potato pealed and finely diced or 3 or 4 table spoons of dried potato
340g/12oz frozen peas
1lt/2pts of water
1 chick stock cube.

The first step get your water and add the stock cube to it and get it on the heat warming up. The second stage is the most difficult as you have to get your onion and potato and peal and dice them as fine as you can. The smaller the pieces the faster they will cook. But do not worry too much for as long as the potato is cooked and you can blend it you will be alright. But if you are looking for an even faster way, Just use two or three table spoons of instant potato. If you think at the end the soup need a little more add a little more.

As you dice the vegetables add them to the pan. Also add the butter to the water. I know and I am sorry my fellow cooks. Yes you should melt the butter and get the flavour of the onions melting in the pan before you add the water and the stock. But this is a recipe in a hurry. Now if you do not like the idea of the butter then do not use it but it gives it a rich taste as only butter can.

Bring every thing to the boil till every thing is cooked and soft. If you use raw potato and cut it in to small pieces about ten to fifteen minuets. If you use dried potato about two or three minuets.

Once every thing is cooked add your frozen peas. Let them just cook for a few second and then take a hand blender and liquidised for a few seconds. See if you need to season it at all and you are finished.

If you have some ham in the fridge just cube it up and pop that in as well or a splash of cream if you have it. But for the speed it takes to cook it makes a very nice soup.
