Greek salad
A good Greek salad should have crisp pepper ripe tomatoes and mouth watering cucumber. As well as the black olives and feta cheese to bring in the balance to all the grate vegetables.
Form my Greek salad you will need
50g/2oz black kalamata olives
3 or 4 medium tomatoes
1 cucumber
1 red pepper
1 green pepper
1 red onion
150g /5oz feta cheese
100ml/3floz olive oil
Fresh oregano
14ml/tdl spoon red wine vinegar
Salt and fresh ground pepper to taste.
Now I say kalamata olives as that Isdhe Greek olive but I would use any black olive as long as it was a good tasting one. But if you want an authentic Greek salad then it has to be Kalamata.
Firs take your red onion and slice it in to fairly chunky slices. Pure on the live oil and red wine vinegar. Season this with salt and fresh ground pepper. I like to do this with the onion as it starts to break down the onion and not make it so harsh to taste. Ten take the oregano and dice that up and mix it with your red onion vinaigrette. Keep this separate as you mix the vegetables in another bowl
Now you want rely ripe tomatoes, cut them in to quarters and then the quarters in to half. Add them to a bowl. Now take you cucumber and peal and deseed it. Just run a spoon down the seed in the centre and scrape them out. Then dice up the cucumber in to chunky pieces and place that in to the blow with the tomatoes. Now take the red and green pepper slice in half. Take of the stalk and remove the seeds. Then dice this in to roughly the same size pieces as all the other vegetables. Add the pepper to the bowl and give all the vegetables a good stir round.
Now crumble the feta cheese in to fairly big chunks and add that to the bowl and then sprinkle the olives in to the mix and stir once or twice more. Now add your red onion olive oil mix to the salad. Mix altogether and then ether chill or serve straight away.
Personally I like my Greek salad made that day with room temperature vegetables that have been warmed by the sun. Evan better in a restaurant in Greece .
