Fudge.



Fudge is a grate thing to make with kids. It seems to have a magical boil then cool and whisk to finish and you can eat it and it taste just grate. Make this at Christmas and you will have a treat to remember or home made sweets to give to the grandparents that will mean so much if the kids do them.

You will need
330ml/¾pt of full fat milk
350g/13oz caster sugar
100g/4oz unsalted butter
1tsp vanilla essence

Take a baking try and line it with some grease proof paper then oil the paper so it is ready when the fudge is cooked. I line the try with paper so that it can lift out with out too much trouble at the end.

No get a thick bottomed pan and add the sugar milk and butter. Now place on a gentle heat and with a wooden spoon start to stir the mixture till the butter has melted. Make sure that all the sugar has dissolved and then turn the heat up.

You need to bring it all to a boil. Be carful not to let it boil over. Then allow it to keep boiling for about 15 to 20 minutes. This is allowing the sugar to cook. Keep siring so that the sugar and milk do not burn. Also do not let sugar crystal build up around the rim of the boiling liquid.

Once you have cooked the mix for this time remove from the heat and let it sit fro about five or six minutes. Then start to stir the mix rapidly. What you are looking for is the glossy liquid go from a glossy liquid to a very thick and cloudy mix. The faster you do this the better the fudge seem to be so speed and strength are best to get a good result.

Once you have done this pour it in to the try and allow to cool at room temperature. Do not put it in the fridge.

Then just turn it out cut it up and eat it, simple to make and fun to do.
