A tasty dessert Carrot Cake.



Carrot cake is a simple and tasty dessert cake for a family meal. The reason for using a carrot in a cake is that it was a cheap and easily accessible way of making a cake with out having to use dried fruits. So it is cheap and economical to make as well.

For this version you will need.

450g/1lb carrots pealed and grated
175g/6oz plain flour
10g/2tsp backing powder
2.5g/½tsp bicarbonate of soda
5g/1tsp salt
10g/2 tsp cinnamon
4 eggs
10ml/2tsp vanilla essence
225g/8oz dark brown sugar
90g/3½oz granulated sugar
300ml/½pt sunflower oil
115g/4oz chopped walnuts
65g/2½oz raisins

For the icing
75/3oz unsalted butter
375g/12oz icing sugar
50ml/2floz maple syrup

First sift your flour salt, baking powder, and bicarbonate of soda in to a bowl. The in another bowl crack your eggs and start to whisk them together. Once you have the well whisked then you can add the vanilla and the oil and whisk for a little longer. Then add your sugar and whisk till every thing is fully incorporated together. If you have an electric whisk then this is the ideal tool to do this job.

Now ad the carrots, raisins and nuts to the bowl with the flour mix in it and gently stir it together coating every thing with flour then a little at a time add the egg mix. Make sure that you get every thing toughly mixed and do not leave any lumps of flour unblended.

And that is it you have your cake batter ready to bake. Pour it in to your lined cake tin and bake in the oven at180°c, 350°f or gas mark 4 for about 40 to 45 minutes. You can tell when it is cooked as it should spring back when you press it. Take it out of the oven and cool for about ten minutes before turning it on to a cooling rack.

Once it has cooled then you can ice the cake. Now this particular icing or frosting is one that was given to me by a cake buff and it is just butter icing but the maple syrup make it a little special and goes so well with the cake. Just take half the sugar and cream with the butter. Then add the maple syrup and the rest of the sugar. Let it stand for a while and then spread on the top of the cake.

Eat with whipped cream and a cup of tea or coffee.
