Recipe for home made ice-cream
Ice cream that you can make at home without a machine.
This is a simple and easy recipe to make and adapt to almost any flavour of ice cream that you like. also it doe nor suffer to much from getting lots of ice crystals in it so you can do loads of things with it and have grate ice cream home made in the freezer relatively cheaply .
For the basic ice cream you will need
1 pint/ 570ml of whipping cream
4 eggs
4oz/110g caster or icing sugar
Some kind of vanilla
To start by separating your eggs so you have egg whites and yolks all nicely separated in two bowls. Then add just a little of the whipping cream No more than a quarter of the pint to a pan and heat up. Take it of the heat before it gets to hat and add it to the egg yolk and the vanilla. All depending if you are using fresh or some kind of vanilla essence. Whisk the egg yolks and the cream together and return to the heat on a very low heat and cook so that they thicken. But do not over cook it and allow the eggs to separate in the pan. This vanilla custard then can be taken of the heat and put to one side to cool. Best to take it out of the pan and place in a cool bowl or the heat from the pan can still cook the egg custard.
You then simply whisk the cream till light and fluffy. Then whisk the egg yolks so that they are all white and frothy then add the sugar a little at a time. This is just the same as making meringues.
Then all you do is genteelly fold all the three ingredients together in one bowl. Then put all of this in to the freezer and you are done, just have to wait it goes solid and you have ice cream.
It works just as well with out making the egg yolk custard. Just use egg whites and cream and you get a lovely white ice cream. From that you can sue it an s a base. Add raspberry coulisse or strawberry, take some of the cream and melt a little chocolate in to it.
If you are feeling cleaver take half and mix with chocolate and leave half un mixed and then mix the two to get a marbled effect.
It is a simple and easy recipe to follow and to do that after you have made your first batch I am sure you will wonder why you have ever bought any other kind of ice cream ever.
