Indian Coconut Bread



Ingredients
75g self-raising flour
50g The Groovy Food Company Organic Virgin Coconut oil
Pinch of sea salt
Plain yoghurt
Extra flour for dusting

Method

Place the flour in a large mixing bowl with a good pinch of sea salt then add enough yoghurt to form a medium soft dough. Knead for 5 minutes then wrap in cling film and rest in the fridge for 20 minutes. When nice and chilled dust a work surface with flour and roll the dough out into one large rectangle. With a spoon, spread the Groovy Food Company organic virgin coconut oil over the dough then fold the dough back in on its self so that you have four sealed ends and the coconut oil is all contained inside. Chill the dough to set the coconut oil for about 5 minutes then carefully roll it out again, this time just folding it back. By doing this you are mixing layers of the coconut oil through the bread. Chill again and repeat once more. Once the dough is nice and cold and firm divide the mixture into two and roll out one piece into a circle about 15cm/5-inches in diameter. Heat a heavy frying pan until hot adding a little coconut oil then add a paratha and cook for about 1 minute. Continue to cook as above for a total of 1-2 minutes, turning frequently. Repeat with the second paratha. Serve hot.

Tasty Vegetable Stirfry


Ingredients

2 tbsp The Groovy Food Company Omega High Five oil
1 onion, peeled and sliced
2 clove garlic, sliced
100g tenderstem broccoli
175g baby sweetcorn, halved
2 pak choi, broken into leaves
2 courgettes, sliced
50g water chestnuts, sliced
2 tbsp light soy sauce
5cm piece fresh root ginger, grated
1 red chilli, sliced
Small bunch coriander, chopped
50g cashew nuts, lightly toasted
Juice of 1 lime

Method

Heat the oil in a wok and fry garlic until it goes lightly brown then add the onion and fry for 3 minutes. Add the chilli, ginger, broccoli florets, sweetcorn and courgettes and continue to fry for a further 5 minutes. Add the pak choi and the water chestnuts and toss to mix in for a further 2 minutes then add the soy sauce, lime juice and a few more drops of the Groovy Food Company Omega High Five oil. Toss the cashew nuts in and serve.

Roast Squash Salad


Ingredients

1 butternut squash
The Groovy Food Company Omega High Five Oil
sea salt and freshly ground black pepper
1 small dried red chilli
1 tspn fennel seeds
20 slices of Parma ham
4 handfuls of watercress
6 tablespoons The Groovy Food Company Omega Cool Oil
4 tablespoons cider vinegar
1 small block of Parmesan cheese

METHOD

Pre heat the oven to 190c then cut the squash in half. Remove the seeds then cut into quarters. Place the squash on a baking tray and rub all over with the Groovy Food Company Omega High Five Oil then sprinkle over some salt, pepper, dried chilli and finally the fennel seeds. Roast in the oven for about 30 minutes until soft, then remove and keep warm. Mix together the Groovy Food Company Omega Cool Oil with the cider vinegar to make a dressing and check the seasoning then gently break up the squash and divide it between four warm plates. Lay the Parma ham slices over the warm squash then scatter over the watercress. Drizzle the dressing over and then finish with shavings of fresh Parmesan and some freshly ground black pepper
