What I think will happen in 2013.
Just looking at things and sitting here trying to predict
what the next big thing will be and I think we will see the following few
trends coming our way in the restaurants and food world.
Value for money.
When I say value for money I think the continuing trend for
watching the pennies are in and austerity is still here to stay for a few more years.
The down side to that is that people get used to it, they like the idea of
value for money and if you do not respect the current flow of the market then
you are looking at difficult times ahead.
Restaurants being redefined.
Not so much a rend but what is happening now, but more and more.
You have to know that you will be asked where is it from, the food the wine , why,
is it sustainable , local, artisan and how does it fit in with my lifestyle. To use a buzz word this is a choice beyond price.
Along with all the other ethical position on how green you are, how you pay
your taxes. Get them wrong and it could be a hostile customer base that revolts,
the bigger the company the more you have to think like this.
The teach-me kitchen
Transparency and open kitchens so you can see what is
cooking and what is being cooked. Popular in designs now but it will not be
long before you get the mirrors so you can see everything that is going on as
it is plated the full theatre of it all.
Street food,
It goes from strength to strength and let’s hope to see it
more out of the capital and in to the provinces. Let there be more of this and
not just famers markets where street food costs as much as a main cores in a restaurant
but real street food that cost next to nothing is a s fresh as a daisy and easy
to eat a little and on to the next for something more.
Fusion food,
A bit 90s but it looks like it might make a come back . But
this time more familiar flavours and a focus on simplicity. I seem to remember it
all got a little silly last time and very confused.
Home baking, keeps on growing.
Bread , cakes biscuits , cupcakes and well you name it you
can bake it, it will be done. And why
not as long as it get people back in to the kitchen and cooking what can be bad
about that.
Changing high street.
With the high street looking to be facing the enviable
change of competition and the internet then something will have to takes its place?
We could see a blurring of destinkt
bopunderys as the high street try to reinvent its self. Pop up restaurants and
dinning experiences, along with music and cultural events all could come together
tin a sort of mish-mash of hip and happening baked by large corporate sponsors.
The next big thing .
The next big thing will be as we go in to the next world cup
and Olympics South American food and flavours. Really I do not know but that is
what I think, but it will probably be more people looking that way as we move
towards those events.
