The Knives Are Out At Leiths.

Leading London cookery school, Leiths School of Food and Wine, have developed two unique knife sets that every professional and aspiring professional will want this Christmas.

Leiths have been teaching their renowned Diploma in Food and Wine as well as informal cookery classes for over 35 years. With this wealth of experience behind them they have honed their skills in all areas of cookery; most notably knife skills.  On average 35 knife skills classes take place at the school each year. It is the longest running class and remains the most popular; one of the most frequently asked question to teachers on this class is what knives do they use or prefer. Finally, after much debate among the staff, that question can be answered.

Leiths have over-seen, tested and approved the production of two knife sets that they feel meet the rigours and demands of a professional kitchen; whilst also looking sleek and stylish in a home kitchen.   Made to the highest specifications and beautifully finished with Oxford blue handles and with the Leiths Logo on the blade, these knives will stand out from the crowd, not only for their elegant look but, more importantly, their durability and comfort.

For professional but affordable knives, the Leiths carbon steel set of knives are made from German Mo.V HRC 56 stainless steel*, which has the ability to take and retain a razor sharpness. The knives are of forged construction; that is to say that the blade, bolster and tang (to which the POM* handle grips are riveted) are hot forged in one piece.  This gives them the great strength they need to withstand long and hard use in the busiest commercial kitchen environment. The knives are presented in a Leiths chef's roll and to maintain the it sharpness a diamond steel is included with the set.

Alternatively, for the ultimate professional knife set, the Leiths Damascus Range has been developed.  These knives are made from Japanese steel consisting of multiple layers of different quality steels around an inner core of very hard specialist cutting steel. The supporting layers provide flexibility and shock absorbing qualities to the blades. The finish of the knives is a beautiful marbled appearance revealing the layers in the process of fashioning them to their final form.  The handles are designed to give a full comfortable and safe grip at all times. A fine ceramic 'steel' is included in the set as coarse sharpeners can damage the 'set' of the cutting edge.

Both sets are available to buy online at www.leiths.com and will be safely delivered to your door, and make a unique gift.  Each knife set contains the following:  Large cook's knife, Japanese Santoku knife, paring knife, boning knife a filleting knife and a knife steel, all presented in a Leiths chef knife roll.

*Mo.V HRC 56 High carbon, non-staining Molybdenum Vanadium knife steel
*POM is a high performance engineering polymer, with high strength, resistance to impact and used instead of metal to enhance grip and save weight.
