Leek and potato soup.



There is some thing so very easy about making a soup using potatoes, it is so very filling and easy to do you can make a large pot of hot steaming soup in just a few moments. This soup is a leek and potato soup, just to prove my point.

You will need.

1 leek
2 large old potatoes
A knob of butter
500ml/ 1 pt chicken or vegetable stock
250ml/½pt cream
Salt, pepper and nutmeg to season.

First peal and cut up you potatoes as fine as you can. The smaller they are the faster they will cook. Gat a pan and the stove and then melt the butter. Then add your potatoes and cook then for a little while in the butter. It is important not to get the pan to hot as the butter will start to burn and you do not want that.

Once you potatoes have stared to take on the butter but then add the stock. If you do not have any sock it does not matter as you can just use water, or water and stock cubes. Just remember if you use a stock cube that it might have a lot of salt in it already so be carful when you season it at the end.

Now just let it cook away till the potato breaks down in to the water. If you want you can blend it together if you like. As it cook take you leek and dice it as fine as you can. Once your potato is broken down in to the water then add the leek. Let it cook for a few moments then add the cream.

Bring back to the boil and then season with salt, fresh ground pepper and a little nutmeg if you have it.

And that is it another easy simple and very tasty soup made in a moment from things that you can have around the house or find in the shops every day.
