Make a real pizza.

You can not beat a home made pizza and this recipe makes enough dough for about two 10 inch pizzas. So if you are planning on making any more then just make a little more or just halve it if you want just one.

You will need

10g/3oz fresh yeast
150ml/¼pt warm water
200g/7oz strong or bread flour
½tsp of salt
2 to 4 tbsp of olive oil.
A pinch of sugar

Now your hear a lot of talk about if you are going to make a real pizza that you need “O” flour but you will find that if you use a standard strong brad flour that it will work just as well . But if you feel the need to go and get the Italian “O” then you can do. I do not think that it makes that much difference but I am sure a nation of Italians will disagree with me.

Take your yeast and crumble it and add a pinch of sugar and a little of the water. Mix this together and let the yeast start working. The sugar help and you will soon see it all frothing up.

Now take the flour and the salt and place that into a mixing blow. Make a well in the middle and add the yeast mix the water and the oil. Mix this all together till you have a soft but not wet dough.

The take it out and knead on a floured surface. You have to do this for about five or so minuets to get it really going. Then place back in the bowl and cover with some oiled cling film and place in a warm place.

Once it has doubles in size then take it and divide the dough in to two equal sized round balls. Then roll and shape them till they are about ten inch circles and you are about ready.

Before you top the pizza bases just Crimp the edges a little to help topping from cooking off the top. Burnt melted cheese takes ages to clean from the bottom of your oven. And then bake in a hot oven about 200°c 400°f or gas mark 6.

And once you have made your pizzas the only thing left to do is buon appetito.
