Banana Bread



This is a great thing to make. If your household is like our household and you find that as soon as the bananas start to go slightly black that the kids will not eat the bananas. Personally, I like them when they start to go black this mean that they are getting to the point when all the sugar and flavours are at the most intense. And that is why you need good black bananas to make bananas bread.
The ingredients are the following.

8oz or 225 g of self-raising flour,
One quarter of a teaspoon of bicarbonate of soda,
A pinch of salt if using unsalted butter,
3oz or 75 g of butter,
6oz or about 175g of caster sugar,
Two good-sized eggs,
1ld or 450g of ripe bananas out of there skins,
4oz or 100g of chopped walnuts, optional.

For this much mix you will need about a 1kg or 2lb loaf tin Lined with greaseproof paper. And the oven heated to about 180C or 350F, gas mark 4, or as I would call it a medium heated oven.

Once you have got your ripe bananas then peal them and place them in a bowl. Take a fork and give them a good mashing. Do this first and then you do not have to worry about getting large lumps of banana in the final mix.

Then in to the final mixing bowl take your sugar and butter and cream them together. The lighter the mix of sugar and butter the better the final finished mix I was always told so give this a good old beating.

Take your eggs and beat them together so that you get them all light and fluffy. This will get air in to the mix and make the final product not to heavy.

Then take your flour and sift that in to another bowl along with the bicarbonate of soda. Once more, this gets air in to the mix and takes out any lumps. Then add a little at a time some of the sieved flour and some of the egg until you have a good batter and towards the end the bananas and finally if you are going to use them the chopped walnuts. Make sure that all the ingredients are bound together and then place in a lined loaf tin and place in a preheated over .

This will take about one and a half hours to cook in a nice slow and low oven to get the bets effect. Take it out and allow to cool for a while on a wire rack and just before it gets to cool cut of a slice and enjoy it with a nice cup of tea.
