Blue cheese dressing salad
Now this is my kind of salad full of real flavour that you
know is going to satisfy. Mind you if you do not like big flavours then this is
not for you, but I know I like it. And if you do not like the idea of a sandwich
then you can just make the blue cheese dressing and have that on a salad
instead.
You will need
50g/1¾oz blue cheese
2tbsp cider vinegar
3tbsp walnut oil
3tbsp sunflower oil
A dash of lemon juice
Salt and freshly ground black pepper to taste
Some ice burg lettuce
Some endive lettuce
2 or 3 chicken thighs
A little thyme
I slice of white bread
A few walnuts
Slices of apple
So to make your dressing you will need a food processor or
some kind of hand blender. Now as to the cheese that you use it is up to
you. Personally I like a good strong
flavour so any strong soft blue cheese is good if you ask me. Also I have used
cider vinegar as I think it just gives it that right flavour but you could use white
wine vinegar or any other that you like. And the same can be said for the
walnut oil , but you get the idea.
Take the blue cheese, cider vinegar, walnut oil, sunflower
oil and lemon juice and use the blender to bring them together. Then season
with salt and pepper to taste.
Process all the dressing ingredients together in a food
processor, adding just enough lemon juice to sharpen up the flavour. And that is that you have made your blue
cheese dressing.
Now to make the salad, first skin and bone the chicken thighs
then beat them nice and flat between some kitchen papers. Now in a bowl add a little
oil the thyme and the slice of bread cut into cubes. In a frying pan start to
fry the bread of so that it turns in crisp croutons. Remove them from the pan and then pan fry the
chicken thighs; let them cook so they are nice and brown on the outside then
pop the crouton back in the pan with the chicken at the last moment
Now chop some ice burg and scatter it in a bowl with, around
the side arrange the endive leaves. Criss-cross the salad with the dressing and
finally cut the chick into thin slices and scatter that across the top with the
croutons. If you have any left crumble a little more blue cheese over it as
well, then garnish with the walnuts and sliced apple to finish.
