Fig tart




I was looking at some lovely fresh figs and thinking about what I could do with them my first thought was just get some good air dried ham and have them with that , then it came to me fig tart.  

You will need
500g/1lb sweet short crust pastry or puff pastry
For the filling
150g/5oz sweet apple
150g/50z caster sugar
300g/10oz semi-dried figs, stalks removed and puréed in a food processor
12 fresh figs
crème fraîche

Now first you will need to roll and blind bake the pastry in your tart tin. Once you have done this set it to one side and then you need to make your fig filling.

Now first take your apple and dice it as fine as you can, you want to make it as small as possible as this will break down in the cooking. Then take your sugar and apple and add then to a pan and put on a low heat. Now while that is cooking take half your dry figs and quarter then. Then add them to the pan with the sugar and the apple. Now add a little water and just let it all stew down to make a nice thick jam.

Now take you fig jam and layer it in to the tart tin. Then on top of that add the other half of the dried figs all quarter. And finally your fresh figs, use a little of the fig jam to glaze the fresh figs.

Now in a  preheat set at  it 170c/325f bake the tart for about 20 to 25 minutes then remove from the oven.

Finally serve either hot or cold with a scoop of crème fraîche just to cut through the sweet taste of the tart.
