Baked Apple with Marzipan

Now I am a big fan of baked apples, As far as puddings go they are so easy to do and just taste really good. Now when I can across this German recipes for baked apples I just had to post it , it is just perfect . A baked apple stuffed with walnuts and marzipan, heavy with cinnamon, what more would you want.

you will need
4 cooking apples
1tsp lemon juice
16 walnut halves
40 g marzipan
A few chopped hazel nuts
2 tbsp Cinnamon
4 tbsp white wine
300 g / 10 oz apple juice
maple syrup

Now you want a nice big cooking apple, wash them and core them. Rub the inside with lemon juice to stop them from going brown. Then place the apples on a deep sided baking tray. Now divide the marzipan up between the apple and place a small lump in the apple, then a walnut then marzipan, and build it up inside. When you have stuffed all the apples top the hole off with the chopped hazelnuts.

Now add a take spoon of wine on to the nuts and let it soak in to the centre. Sprinkle the apples very liberally with cinnamon.  Then pure in the apple juice around the apples and then place in the oven.  You need your oven set at 160c/355f and bake them for about 30 minutes.

Just before they are done about  take them out and add some maple syrup to the juices in the roasting pan and then brush that on the outside of the apples. Pop them back in the oven for another 5 to 10 minutes and they are done. Any liquid left in the tray spoon over the apples as you serve them on a plate .

Then serve on a plate with a good vanilla ice cream
