Kartoffelpuffer Potato Pancakes.



Now a potato pan cake is not a rosti, it is something a bit more than that. For a potato pancake you need something to make a bit of a batter to hold it together and that is the difference. Whereas a rosti is just grated potato, that is squashed together and then fried.

For this version of Kartoffelpuffer you will need.
6 large potatoes
4 eggs, well beaten
3 to 5tbsp milk
3tbsp plain  flour
¼tsp baking powder
A good pinch of salt and pepper to taste
1 onion

Now to start with you need to mix the flour, baking powder and milk together so there are no lumps. Now crack you eggs in to a bowl and work them in to the mix, making a thin batter. Now peal and was your potatoes then great them in to the batter mix. Fold them in as you great them so they do not go all dark. Finally season with salt and pepper and add the fine diced onion.
 
Now get a heavy bottomed frying pan or skillet on the stove and heat up on a medium heat.  Add a little oil or butter to the pan with a brush you do not want it swimming in fat. Then spoon some of the potato mix on to the pan and let it cook. Once one side has cooked you should be able to move it easily. If it is sticking then just let it cook a bit longer, but if it looks like it is going black turn it. Once they are cooked on both sided the potato pancake is done .

Now fresh is best but you can have them reheated , my favourite would be with crispy bacon and a poached egg on top.
