Bauernfrühstück
This I am assure is what is known as a Bauernfruhstuck , or farmers breakfast. Now as far as I can tell there are just as
many versions of this as you could imagine as it seems to be everything for a
very filling owlet to a sort of hash loosely bound with scrabble eggs. Now as
far as I can tell it should be all cooked in one pan and then served in the pan
and you scoop out what you want. But eh basic
of a good breakfast potatoes, eggs and bacon or ham seem to appear in them all.
For my Bauernfrühstück you will need
6 to 8 cooked new or salad potatoes
4 eggs beaten
4 slices bacon
1 onion
6 to 8 mushrooms
6 to 8 cherry tomatoes
A clove of garlic
6 Jalapeno peppers slices
A little milk
A dash of butter
Salt and ground black pepper to taste
Fresh basil to finish
First slice the cooked potatoes then dice the onion nice and
fine and slice your mushrooms. Now take a nice large frying pan and put that on
a medium heat. Dice you bacon and start to fry that off in the pan. Once your
bacon has started to cook and go brown add the onions and the potatoes. Fry them
together so the potatoes start to soak up the fat from the bacon.
While that is all cooking crack you eggs in to a bowl with a
little milk and whisk them together.
Now add you mushroom and let them cook down. You want to
cook the mushroom so that almost all of the water that comes out of them has been
cooked away. Add the garlic crushed to the pan as the mushrooms are cooking.
Finally add the cherry tomatoes and the Jalapeno slices stir
them in and then add the egg. Work everything together so that it is all fully
combined and let to cook on the stove top for a bit . Once it has cooked from
the base then pop it under the grill. Or the other way that this is often
cooked is by constant stirring so you get a sort of scramble egg mix.
Finally taste and season with salt and pepper and then throw
in some fresh basil right at the end .
