Spiced German Mustard
Now this is a great present that you can make, package and
send to friends as extra Christmas presents. We all know how expensive mustard
can get if you buy it in the shops and it is like this with a little adjustment
you can get the mustard that you want. In total this makes about 8floz of 240
gram of mustard. Now if you do not like your mustard to hot do not use English mustard
powder but if you like it hot experiment with different ratios to get the mustard that you like . This makes medium
hot mustard, if you do not like grain mustard just use powder. Also if you are
going to make this you will need a heavy based saucepan.
You will need.
240ml/8floz cold water
169g/6oz yellow mustard seed
56g/2oz dry mustard powder
240g/8floz cider vinegar
1 small onion
2tbsp brown sugar
2 garlic cloves
1tsp. salt
½tsp. ground cinnamon
¼tsp. allspice
¼tsp. dried dill
¼tsp. dried tarragon
⅛tsp. turmeric
1tbsp runny honey
Now take your mustard powder and seed and add them to a bowl
with the water and let it all soak for about 3 to 4 hours. What you want to see
is the mix goes to a sort of paste in the bowl.
Once that is done then you need to chop the garlic and the
onion as fine as you can. Now add the cider vinegar, brown sugar, salt, cinnamon,
allspice, dill , tarragon and turmeric to the onion and garlic in a pan and
bring to the boil . Let this reduce by half then use a hand blender and add
that to the mustard mix.
Now add everything back in to the sauce pan and cook very slowly
on a low heat for about 10 to 15 minutes. Once the mustard is nice and think,
not too thick as remember it will thicken as it cools, take it off the heat and
in to a bowl. Add the honey and stir it in then place in the fridge to cool
down. Once cool then spoon into a sterilised jar and seal it up nice and tight.
I am not sure how long it will last , I am told two years if
you keep it refrigerated , It just never last that long when I have made it
before.
