Heard it through the grapevine



This salad is packed full of contrasting textures and flavours, like sweet grapes, and sharp Manchego cheese. Quick to prepare, serve with a glass of cold Spanish Rosado, and let thoughts turn to upcoming holidays.

Manchego Cheese Salad

Difficulty: Easy
Preparation time: 20 minutes

Ingredients:

2 heads of mixed lettuce (either: Iceberg, Romaine, Lollo rosso) chopped
60g grated Manchego cheese
125g Walnuts
175g Dates
50g Grapes
2 tbsp Sherry vinegar
2 tbsp Virgin olive oil

Preparation

Mix together the lettuce, grapes, dates and walnuts and dress with the sherry vinegar, salt and olive oil.
Place baking paper in a shallow dish, and make small piles of the grated Manchego cheese so that they form into small discs once melted.
Place under a hot grill for a few minutes until golden brown, leave to cool and then slowly pull away from the baking paper. Serve with the salad.
