Pancakes with bacon and maple syrup.
Now you could
say that this is bang on trend at the moment with sweet and savoury
combinations like salted caramel. It is of course nothing new, the combination
of bacon maple syrup and pancakes has bee an American staple for any number of
years.
You will
need.
175g/6oz
plain flour
1 tsp baking
powder
25g/1oz
caster sugar
2 free-range
eggs
250ml/9fl oz
milk
25g/1oz
butter
12 rashers
maple-cured bacon
Maple syrup,
to serve
Now this recipe
is slightly different to how I would normally make them as I have separated the
egg yolks from the whites, it makes a lighter and fluffier pancake. Also of you
can get I like to use streaky bacon but it all depends on what you can get.
Separate your
eggs in to two bowls. Then in the bowl with the yolks add the flour, baking
powder, caster sugar and milk. Whisk this to make a smooth batter. Now in the
other blow whisk the egg whites until you have nice soft peaks. Now gently fold
the egg whites into the batter.
Now get two
frying pan out on and the heat, in one you need to cook your pancakes. Melt a
bit of butter in one and just spoon the batter in to the pan when it is hot.
Cook on both sides for about 2 to 3 minutes, you will see bubbles start to form
on top of the batter then it is ready to turn.
Now in the
other pan cook the bacon until crisp then remove from the pan and place on some
kitchen paper. Now make a stack of pancakes topped with bacon and drizzle over
with some maple syrup.
