White Chocolate and cranberry pancakes
Now if you
like those big cookies that you can get with white chocolate and cranberries
then you will like these pancakes. Once again, this makes an American style
pancake but it is totally and utterly scrumptious, indulgent and well worth
while. Kids will love them, adults will love them, in fact white chocolate and
cranberry who will not like them.
You will
need.
2 eggs
5 tbsp milk
150g/5oz
plain flour
2 tbsp caster
sugar
A pinch of
salt
75g/3oz white
chocolate chips
75g/3oz dry
cranberries
A little oil
First take the
cranberries and add a little water to them to help soften them up, you do not
need to totally rehydrate then but just help them soften a little.
Now the way
to make this batter is easy and you need it thick for an American style pancakes
so do not add to much liquid unless you have to. First whisk together the eggs
and milk. Then sift the four in to a large bowl and add the caster sugar and a
pinch of salt. With a spoon mix the dry ingredients together then make a well
in the centre. Now pure the egg and milk mix in to the well and work it all
together with a whisk until smooth.
Once you have
made your batter drain off the water from the cranberries and then add them and
the chocolate chips into the batter. Stir them in so you get a nice
distribution throughout the batter.
Now brush a
layer of oil over your frying pan, use a non-stick pan or even better a heavy
cast iron one. Then spoon some of the mix in to the pan and allow it to cook
for about 2 to 3 minutes on each side. A good way to tell if the first side is cooked,
you will see little holes appear on the carfare of the batter as the air
escapes.
Once you have
coked them on both sides and they are golden brown serve them immediately with
Ice-cream and a good drizzle of maple syrup.
