Summer Isles Hotel Appoints Alan White as Head Chef
The award winning Summer Isles Hotel is delighted to
announce the appointment of Alan White as Head Chef with immediate
effect.
Summer Isles Hotel has long been renowned for its culinary
reputation receiving a host of accolades over the years, including a
coveted Michelin star for 13 years when Chris Firth-Bernard was Head
Chef. Chris who retired from the hotel’s kitchen last year after 26 years of loyal service. Alan now hopes to build upon these solid foundations while adding
his own style to the dining experience and so it is with great excitement
that the team at the hotel are gearing up for the forthcoming season.
Alan himself enjoys an excellent reputation having been Head
Chef for the past five years at the
luxury Alpine Ferme de Montagne in Les Gets where he received a host of excellent reviews from journalists and
celebrities including Tom Parker-Bowles and Anneka Rice. Harpers and
Queen magazine also rated Ferme as one of the best 150 restaurants in the world
while The Times, F.T. and Le Figaro all heaped praise on Alan for his elegant
cuisine.
Aware that Alpine cuisine although extremely delicious is
not exactly ‘cutting-edge’, Alan took care to ensure that he remained in
touch with modern methods by attending ‘stages’ at the end of the ski
season in the
kitchens of some of the most innovative and respected
Michelin starred chefs in the industry.
Working with notable chefs Martin Wishart, Andrew Fairlie, Jeff Bland, David Everett Matthias and in kitchens such as
The Square, The Ledbury, The Lanesborough, Watley Manor and Le Manoir Aux
Quat Saisons
ensured that he was never left behind and he delighted in
introducing what he had learnt to the lucky guests of La Ferme and adding his
own interpretations along the way.
Summer Isles Hotel is pleased that Alan has decided to
return to his native Scotland where he began his career fourteen years ago. During this time he has cooked not only for many members of the Royal family
including Prince Charles, The Duke of Edinburgh and the Princess Royal but
also for an eclectic mix of VIP’s
including Kofi Annan, Lou Reed, Van Morrison, Jools Holland and Gordon Brown.
Alan is looking forward to working with the abundance of
fresh produce on offer in the Summer Isles and his focus will be on the
sea-food, game and quality highland meats available to him as well as the
excellent choice of vegetables and herbs grown in the local Achiltibuie Gardens.
Speaking yesterday Alan commented ‘I am bringing the best
aspects of the past few years working in France together with my
experiences of working in some of the most fantastic restaurants in the U.K. and these
combined with having the best larder in the world on my doorstep means
that I feel 2013 will be the year that I produce the most exciting food I
have cooked to date.”
Summer Isles Hotel owner and manager, Terry Mackay also said
‘We are delighted to welcome Alan back to Scotland and look forward
to a long and happy association working together. The hotel has always enjoyed a great reputation for its food with many guests returning year
after year to sample the delights from our kitchens; we are confident in Alan
that we have found a Head Chef who will continue to charm and delight our
guest’s palates’
