New Year’s Resolutions Never Tasted So Good!



 It’s that time of year again – New Year’s Resolutions aplenty and those extra Christmas pounds to shed! As crisp breads and cottage cheese lose their lustre, this delicious alternative will get dieters back on the straight and narrow. A lighter version of the much loved stir fry, this recipe makes for a quick and easy supper packed with nutritious veggies!
  
Oriental Vegetable Stir Fry

Serves 4

Level of difficulty: Low

Preparation time: 30 minutes

Ingredients

400g broccoli

250g tomatoes

250g peppers

2 cloves garlic

2 tablespoons olive oil

Salt and pepper

1 small red onion

2 small red chillies

6 tablespoons Thai sweet chilli sauce

Preparation
  
Clean and cut the broccoli into florets. Blanch in boiling salted water for 3-4 minutes.
Chop the tomatoes and peppers into cubes. Peel and chop the garlic. Finely chop the onion.
Heat the olive oil in a pan, sauté the peppers, then add the onion and garlic until brown.
Add the tomatoes and broccoli along with the chilli. Finally, add the Thai sweet chilli sauce and season with salt and pepper. Simmer briefly and serve.
